Our Menu

Chef Jim Boule is a native to Vermont currently residing in Rutland just outside of his childhood hometown of Castleton.  He enjoys spending time with his girlfriend and family, camping, skiing and just living in Vermont.  His passion is creating entrees that leave a guest’s mouth watering for the next course.

He graduated from the New England Culinary Institute in Essex, Vermont.  During and after his studies, he interned and worked at Café Provence in Brandon and the Basin Harbor Club in Vergennes. Before attending NEIC, Jim was enlisted in the Army in Fort Carson, Colorado.  He served as a food service specialist for 3 years.

The last two years Jim was employed at the Porch in Rochester, VT as their catering chef and then as the Executive Chef at the bistro. 

The Mendon MountainView Lodge is privileged to have Jim join our staff.  He will be an asset to the dining experience of all our guests.

As the Executive Chef of Heli’s Restaurant, he is creating some new and exciting dishes that tantalize tastebuds
